Description
Drift has fast become a symbol of the quintessential, never-give-up Australian attitude. The story of its revival after the Queensland floods is now the poster boy for the state's recovery effort.

In its brand new digs, set overlooking the 18th green of the Brookwater Golf Course, there are few better places for this darling of the Brissie dining scene to make its triumphant return. (And yes, it is well away from the water's edge this time.)

Just like its previous incarnation in Milton, Drift has retained the services of Romain Bapst at the helm of the kitchen, and his return menu is impressive to say the least. The faith shown in financing the revival of Drift has been repaid in full with a menu that reads more like an homage to Queensland's premier produce. As has become Bapst's calling card, he manages to bring refinement and subtlety to traditionally comforting foods. Salt and pepper calamari is elevated by a pairing of sweet and sour Mediterranean vegetables; while a sauteed Morton Bay bug tail coupled with handmade gnocchi, chestnuts, peas and sage transcends rustic charm into the sublime.

Like the seasonal, made-to-order souffle that reigns supreme over Drift's dessert menu, we've had to be patient to see the end result of this restaurant's resurgence. But just like the souffle it's well worth the wait.

Imagine living right next to your very own golf championship standard 18 hole golf course. The major focal point of Eynesbury Township is the magnificently restored 1870's Bluestone mansion which will serve as the golf course's clubhouse for the stunning Graham Marsh designed layout that will be a true challenge to any standard of golfer. The heritage listed original sheep station homestead is being impeccably restored to its former glory and will also play host to the bistro, restaurant, spike bar and reception facilities.

Eynesbury was delighted to have Graham Marsh provide the masterplan to this golf course with "real Australian character." Graham Marsh's name is legendary, his courses are amongst the finest the world over. Graham has won over 60 professional tournaments over his long and illustrious career including wins on all five of the world's major tours and whilst still an active participant in the lucrative US Senior's Tour, still finds time to build award-winning golf courses such as Sutton Bay in South Dakota. This was voted USA's best new private course in 2004. Some of Graham's signature golf courses in Australia include The Vines in W.A., Robina Woods and Palm Meadows on the Gold Coast, Terrey Hills in Sydney, and Growling Frog Public Course in Whittlesea.

The low handicap player will be tested by the course's length from its championship tees. Importantly however, multiple tee boxes will ensure that the novice player will be faced with a less daunting length of course, ensuring that every golfer will reap a reward from an Eynesbury golf visit. Generous, wide fairways and attractive, fair bunkering is a feature of the Eynesbury layout, which will be complete and ready for play in May 2007.

The golf course will have state-of-the-art electric golf carts ensuring an enjoyable, less fatiguing round of golf for everyone, plus a stunning driving range, practice putting green, chipping and bunker areas.

Sounds exclusive? Well, in some ways, yes - it will be a course that ranks right up amongst Victoria's finest - however, it will be open to the public to pay and play all year round.
